Grilled Pineapple

  • 1 Pineapple
  • equal parts butter and brown sugar
  • cinnamon

Melt down butter and mix in brown sugar.  If the sugar won’t dissolve, add a splash of water.  Remove skin of pineapple, cut into quarters.  Then slice down each point to remove the core.  Dust pineapple with a little brown sugar and sprinkle with cinnamon if desired.  Toss onto a hot grill and baste in the sugar/butter mixture liberally and frequently.  Cook to desired doneness turning often to avoid burning.  Enjoy!  It’s excellent over Jeni’s Splendid Gooey Butter Cake Ice Cream (though it’s incredibly hard to find in this area.)
