Lemon Cilantro Chicken Skewers

These come out so amazing!  The tender, juicy chicken…crunchy, fatty bacon…. mmmmmm!

What you need

  • Chicken breasts -Boneless Skinless(1-1.5 per person)
  • Skewers
  • 1 large or 2 small lemons
  • 1 small lime (optional)
  • 1 tbsp granulated garlic more to taste
  • pinch of salt
  • 1 tsp coriander
  • 1/2 bunch of cilantro
  • 1/2 cup of oil (canola, olive, etc… something mild)
  • Bacon (enough to cover the number of skewers you’re making…this usually takes me two strips per skewer)
  1. Mix oil, lemon juice, garlic, salt, coriander, lime (if using), and the chopped cilantro leaves to make your marinade
  2. Slice chicken into about 1 inch wide strips and toss into marinade
  3. Marinade chicken for at least one hour…no more than five
  4. Skewer chicken (usually about 2 pieces per skewer will do it.  Use 3 if necessary.  You want some ends exposed so it can be handled.  But enough meat to make it worth eating)
  5. Wrap each skewer in Bacon.  (this can be a little hard.  We happily punch through a few toothpicks to hold it in place but it can be done without them…especially if you’re not OCD)
  6. Toss them onto a HOT grill, indirect heat for about 20 minutes.
  7. Move to direct heat to sear and crisp the bacon until done
  8. Pick a skewer that’s thick in the middle and pull the chicken apart to check for doneness.  Continue cooking as needed (until there is no pink remaining in chicken)
  9. Enjoy!

I served this with some oven fries (home made french fries) and some roasted broccoli.  Then Grilled Pineapple for dessert! Great meal and fairly healthy considering all that bacon!
